Turbulence models are necessary because we cannot afford big enough computers to directly capture every scale of motion. This term is known as Reynolds stress. Chapter 5 discusses selection of physical models available as user options. One reason is that CFD still uses models that need to be validated for each new application area (like turbulence and two-phase flow or phase change models).
